7 oz (200 g) long grain rice, rinsed
4 fl oz (120 ml) full-fat coconut milk
2 tbsp cilantro, chopped

Instructions

  • Combine rice, 8 fl oz (240 ml) water, and coconut milk in small pot. Season with salt.
  • Bring to a boil, then cover and reduce heat to medium-low.
  • Cook for 12 to 15 minutes, or until rice is tender and liquid is absorbed.
  • Remove from heat, stir in cilantro, and let sit, covered, until ready to serve. Serve alongside Baked Tofu with Peanut Sauce (see original recipe).
