Chickpea Avocado Veggie Wraps

Ingredients

8.5 oz (240 g) canned chickpeas, drained
6 tbsp guacamole (store-bought or homemade)
½ tsp ground cumin
½ red bell pepper, sliced
½ cucumber, sliced
1 tomato, diced
1 small red onion, sliced
2 tbsp fresh parsley, chopped
1.4 oz (40 g) arugula
1 tbsp balsamic vinegar
2 whole wheat tortillas

Instructions

  • Place chickpeas and guacamole in bowl and gently mash together. Season with ground cumin, salt, and pepper.
  • In large bowl, combine bell pepper, cucumber, tomato, onion, and parsley. Add 1 tablespoon extra virgin olive oil and balsamic vinegar. Season with salt and pepper.
  • Warm tortillas in dry pan.
  • To assemble, spread each tortilla with mashed avocado and chickpea mixture. Top with mixed salad and arugula.
