Ingredients

For the dry ingredients:
  6.4 oz (180 g) all-purpose flour
  1.4 oz (45 g) vanilla whey protein powder
  1 tsp baking soda
  2.6 oz (75 g) fresh blueberries
For the wet ingredients:
  3.5 oz (100 g) coconut sugar, packed
  4 tbsp maple syrup
  5.3 oz (150 g) mashed blueberries
  2 large eggs
  4.2 fl oz (125 ml) unsweetened almond milk
  2 tbsp coconut oil, melted

Instructions

  • Preheat oven to 350°F (180°C) and spray donut pan with cooking spray.
  • In medium bowl, whisk together all dry ingredients.
  • In large bowl, whisk coconut sugar and maple syrup. Add mashed blueberries, eggs, and almond milk. Stir until well combined.
  • Fold dry ingredients into wet mixture. Add melted coconut oil and stir again until fully incorporated.
  • Fill each donut mold generously. Bake for 8 to 10 minutes, or until toothpick inserted comes out clean.
  • Remove from oven and let cool for a few minutes before transferring to wire rack. Be careful not to leave in pan too long, as they will continue to bake and may become dry.
  • Serve or store in airtight container in cool, dry place.
