Slow Cooker Greek Chicken

Ingredients

For the lemon Greek yogurt sauce:
  8 oz (227 g) 2% fat plain Greek yogurt
  4 cloves garlic, minced
  zest of 1 lemon
  2 tbsp fresh lemon juice
For the chicken:
  2 lbs (900 g) boneless, skinless chicken breasts

Instructions

  • In bowl, whisk together yogurt, garlic, lemon zest, lemon juice, and ¾ teaspoon sea salt.
  • Place chicken in 6-quart slow cooker. Season with ¾ teaspoon salt. Pour 6 tablespoons of yogurt sauce over chicken and toss to coat.
  • Cover and cook on high for 2 to 4 hours, or on low for 4 to 6 hours.
  • Remove chicken and shred. Strain cooking liquid and return 4 tablespoons to slow cooker.
  • Return chicken to pot. Add 6 tablespoons of reserved yogurt sauce and toss to warm through (about 5 minutes on high).
  • Serve with remaining yogurt sauce on side or drizzled over chicken.
