8 small tortillas (corn or flour)

  vegan sour cream
  cilantro (coriander)

Instructions

  • Heat 2 tablespoons extra virgin olive oil in skillet over medium heat. Add black beans, spices, and ¼ teaspoons of salt and pepper. Cook for 3 to 5 minutes until heated through.
  • Warm tortillas briefly in pan or oven. Assemble tacos with bean filling and any optional toppings.
