Ingredients
12 oz (340 g) tomatoes, chopped, divided
10.5 oz (300 g) red lentils, rinsed
4 cloves garlic, chopped
½ oz (15 g) basil, chopped
2 oz (60 g) tomato paste
1 ½ tsp coconut sugar
1 tsp dried oregano
1 lemon, to juice
6 fl oz (180 ml) oat cream

Instructions
- In slow cooker, add lentils, garlic, 10 oz (280 g) tomatoes, tomato paste, 2 tablespoons extra virgin olive oil, 1 tablespoon salt, sugar, oregano, 1 teaspoon black pepper, and 50.7 fl oz (1.2 L) water. Cook on high for 4 hours.
- Mix soup with wooden spoon to break down lentils and tomatoes. Stir in remaining tomatoes, chopped basil, lemon juice, and cream.
- Adjust seasoning. Thin with extra water if needed.
