Three-Bean Chili

Ingredients

1 onion, diced
3 cloves garlic, minced
2 jalapeños, seeded, diced
3 tbsp chili powder
1 tsp chipotle powder
15 oz (425 g) can black beans, drained
15 oz (425 g) can kidney beans, drained
15 oz (425 g) can pinto beans, drained
28 oz (800 g) canned diced tomatoes
1 tbsp cocoa powder
To garnish (optional):
  green onions, sliced
  cashew sour cream
  lime wedges

Instructions

  • In large pot, heat 1 tablespoon extra virgin olive oil over medium heat. Sauté onion for 7 minutes until soft. Add garlic, jalapeños, and spices. Season with salt and pepper. Cook for 1 minute.
  • Add beans, tomatoes, cocoa powder, and 12 fl oz (360 ml) water. Bring to a boil. Reduce heat and simmer for 15 to 20 minutes.
  • Adjust seasoning to taste. Serve with desired toppings.
