Ingredients

1 ripe banana, mashed
12.5 fl oz (375 ml) unsweetened plant-based milk
7 oz (200 g) rolled oats
2 oz (60 g) vanilla plant-based protein powder
2 tbsp chia seeds
½ tsp cinnamon
5 oz (140 g) fresh or frozen berries
1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). In 7- or 8-inch baking dish, mix banana with milk and vanilla extract.
  • Add oats, protein powder, chia seeds, cinnamon, and ½ teaspoons salt. Mix until fully combined. Gently fold in berries.
  • Bake for 30 minutes until golden and set. Let cool for 20 to 30 minutes before slicing. Serve warm or chilled.
