Ingredients
4 tbsp spelt flour
1 tsp baking powder
1.5 oz (40 g) kale, fresh or frozen
5 fl oz (150 ml) oat milk
1 tbsp chia seeds
For the yogurt dip (optional):
3 tbsp plant-based natural yogurt
fresh dill, chopped
fresh parsley, chopped
3 tbsp plant-based natural yogurt

Instructions
- Add all pancake ingredients to blender, season with salt, and blend until smooth.
- Heat 1 tablespoon extra virgin olive oil over medium heat. Scoop 4 tablespoons of batter per pancake and spread gently into round shape. Cook for 3 to 4 minutes per side, or until golden with bubbles forming on surface. Flip carefully.
- Serve with suggested dip recipe or your favorite dip.
