Easy Cucumber Chicken Salad

Ingredients

1 lb (450 g) boneless, skinless chicken breasts
1 cucumber, diced
2 fl oz (60 ml) rice vinegar
1 tbsp toasted sesame seeds
1 tsp granulated sugar
½ tsp toasted sesame oil
Garnishes (optional):
  green onions (spring onions) or cilantro, chopped

Instructions

  • Place chicken in saucepan. Cover with water by 2 inches. Add 1 teaspoon salt. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, or until cooked through.
  • Transfer chicken to cutting board and let rest for 5 minutes.
  • In large bowl, whisk vinegar, sesame seeds, sugar, sesame oil, ½ teaspoon black pepper, and 1 teaspoon salt until dissolved.
  • Dice or shred chicken. Add chicken and cucumber to bowl and toss to coat.
  • Adjust seasoning to taste. Garnish with green onions or cilantro if desired.
