9 oz (250 g) salmon filets
3 bell peppers (red, yellow, orange), thinly sliced
14 oz (400 g) cherry tomatoes
1 tbsp sweet paprika
1 tbsp whole grain mustard
1 tsp thyme

Instructions

  • Preheat oven to 390°F (200°C).
  • In bowl, whisk together 4 tablespoons extra virgin olive oil, mustard, 2 tablespoons vinegar, thyme, paprika, salt, and pepper. Toss sliced bell peppers and tomatoes in marinade.
  • Place salmon filets on lined baking tray or in casserole dish. Surround with marinated vegetables and pour remaining marinade over. Bake for 20 minutes, or until salmon flakes easily.
