Sheet Pan Chicken & Vegetable Bake

Ingredients
1 lb (450 g) boneless, skinless chicken breasts
1 tsp each: smoked paprika, garlic powder, onion powder
8 oz (225 g) broccoli, cut into florets
1 red bell pepper, cut into 1-inch cubes
1 red onion, chopped into large pieces
1 tbsp fresh parsley, chopped

Instructions
- Preheat oven to 400°F (200°C). Line large baking sheet with parchment paper.
- Place chicken breasts on sheet. Rub with spices, salt, pepper, and ½ tbsp olive oil.
- In large bowl, toss broccoli, red bell pepper, and red onion with salt, pepper, and 1 tablespoon extra virgin olive oil. Arrange vegetables around chicken on pan.
- Bake for 20 to 25 minutes, or until chicken is cooked through and vegetables are tender-crisp.
- Let chicken rest for a few minutes before slicing. Garnish with parsley.
