Ingredients

For the turkey:
  8 oz (225 g) 90 to 95% lean ground turkey
  1 tbsp tamari
  2 tsp mirin
  ½ tsp fresh ginger, grated
  2 tsp coconut sugar
For the eggs:
  4 large eggs
  1 tbsp tamari
  2 tsp mirin
  1 tbsp coconut sugar
Suggested toppings (optional):
  brown rice
  sliced green onions (spring onions)
  arugula

Instructions

  • Heat ½ tablespoon extra virgin olive oil in nonstick pan over high heat. Add ground turkey, tamari, mirin, ginger, and sugar. Cook for 5 minutes, breaking meat into small pieces. Remove from pan and drain excess liquid.
  • In bowl, whisk eggs with tamari, mirin, and sugar. Heat ½ tablespoons extra virgin olive oil in same pan over medium-high heat. Pour egg mixture in and scramble gently for 1 to 2 minutes, until cooked through.
  • Divide between bowls with suggested ingredients or your desired sides. Serve immediately.
