Ingredients

2.5 oz (60 g) rolled oats
1 tbsp whole flaxseed
4 tbsp peanut butter
2 tbsp maple syrup
⅛ tsp baking soda
Suggested toppings (optional):
  dairy-free chocolate chips
  vegan white chocolate
  slivered almonds
  raisins
  nuts/seeds of choice

Instructions

  • Preheat oven to 350°F (175°C) and line baking tray with parchment paper.
  • Grind oats and flaxseed in blender until flour-like mixture forms. Transfer to bowl and mix in peanut butter, maple syrup, 2 ½ tablespoons water, and baking soda. Stir until dough forms. If too dry, add water 1 teaspoon at a time.
  • Divide dough into 9 balls, flatten slightly, and place on lined baking tray. Add optional toppings, if desired.
  • Bake for 8 to 10 minutes, or until edges are golden. Let cool slightly before serving.
