20 oz (567 g) canned crushed pineapple, undrained
3.5 oz (100 g) coconut sugar
1 tsp vanilla extract
8.5 oz (240 g) all-purpose flour
1 tbsp baking powder
4 oz (115 g) walnuts, chopped

Instructions

  • Preheat oven to 400°F (200°C). Line 12-cup muffin tin.
  • In mixing bowl, combine pineapple (with juice), sugar, 5 tablespoons extra virgin olive oil, and vanilla extract. Mix well. Add flour, baking powder, and ½ teaspoon salt. Mix until just combined. Stir in walnuts.
  • Divide batter between muffin cups, filling almost to top. Place in oven, then immediately reduce temperature to 350°F (175°C).
  • Bake for 25 minutes, or until toothpick inserted comes out clean.
