Black Bean Meatballs

Ingredients
3.5 oz (100 g) oat flour
1 ½ tbsp ground flaxseed
8.4 oz (240 g) canned black beans, rinsed, drained
3 oz (85 g) rolled oats
1 tsp each: smoked paprika, garlic powder, onion powder

Instructions
- Preheat oven to 425°F (220°C).
- In food processor, pulse rolled oats and flaxseed. Return to bowl. Add black beans to food processor with 4 tablespoons water and purée until smooth.
- In bowl, combine purée with dry ingredients, seasonings, and 1 ½ teaspoons salt. Mix and let rest for 5 minutes to firm up.
- Line baking tray with parchment paper. Scoop mixture into 1-inch balls, and place on tray. Bake for 6 to 8 minutes, flip, and bake for 6 to 8 more minutes.
- Serving suggestions include marinara sauce and fresh parsley (optional).
