Curried Chickpea Salad

Ingredients

8.4 oz (240 g) canned chickpeas, drained, rinsed
2 tbsp red onion, chopped
1 celery stalk, diced
2.75 oz (80 g) silken tofu
1 tsp curry powder
1 tsp lime juice
½ tsp Dijon mustard
2 tbsp fresh dill, minced

Instructions

  • Add chickpeas to medium bowl and mash with fork until chunky. Stir in onion and celery.
  • In blender or using immersion blender, combine tofu, curry powder, lime juice, mustard, ½ teaspoon salt, ½ teaspoon pepper, and 3 tablespoons extra virgin olive oil. Blend until smooth.
  • Pour dressing over chickpea mixture. Add dill and mix until well combined.
  • Cover and chill for at least 15 minutes before serving.
