Velvety Sweet Potato Soup

Ingredients

2 onions, diced
2 leeks, white & pale green parts only, sliced
2 cloves garlic, chopped
2 lbs (900 g) sweet potatoes, peeled, chopped
1 tbsp ground cumin
42 fl oz (1.25 L) vegetable stock
Optional garnishes:
  olive oil
  cream
  yogurt
  pistachios

Instructions

  • Heat 1 tablespoon extra virgin olive oil in large pot. Sauté onions, leeks, and garlic for 5 minutes until softened. Add sweet potatoes and cumin. Cook for 3 more minutes, stirring often.
  • Add stock, 1 ½ teaspoons salt, and 1 teaspoon pepper. Simmer uncovered for 20 minutes, or until sweet potatoes are very tender. Remove from heat and blend until smooth.
  • Serve drizzled with your chosen garnish and crunchy topping, if desired.
