Smoked Tomato Chickpeas

1 small onion, finely diced
2 cloves garlic, finely diced
14 oz (400 g) canned chickpeas
1 tsp ground cumin
1 tsp smoked paprika
pinch of chili powder or cayenne pepper
14 oz (400 g) canned plum tomatoes

Instructions

  • Heat 1 teaspoon extra virgin olive oil in frying pan over low heat. Add onion and sauté until translucent. Add garlic and cook for 2 minutes.
  • Stir in cumin, paprika, and chili. Cook briefly, then add tomatoes, salt, and pepper. Use spoon to break down tomatoes. Add 6 tablespoons water and chickpeas. Simmer uncovered until thickened (about 30 minutes). Adjust seasoning to taste.
  • Serve chickpeas with your favorite sides. Serving suggestions include scrambled tofu, avocado, and toast (optional).
