Crunchy Pistachio Granola

Ingredients
8 oz (220 g) rolled oats
4.8 oz (135 g) shelled pistachios
2.4 oz (70 g) unsweetened coconut chips
1.6 oz (45 g) pumpkin seeds
3.5 oz (100 g) coconut sugar
5 tbsp maple syrup

Instructions
- Preheat oven to 300°F (150°C).
- In large bowl, combine oats, pistachios, coconut chips, pumpkin seeds, and 1 tablespoon salt.
- In saucepan over low heat, warm sugar, maple syrup, and 5 tablespoons extra virgin olive oil until sugar dissolves. Remove from heat. Pour over dry mixture and stir well to coat.
- Spread evenly on parchment-lined baking sheet. Bake for 35 to 40 minutes, stirring a few times, until golden and crispy.
- Let cool before storing.
