Ingredients

5.3 oz (150 g) whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
2 large bananas, mashed
4.2 oz (120 g) plain yogurt
1 large egg
3.9 oz (110 g) coconut sugar
4 tbsp honey
Optional toppings:

Instructions

  • Preheat oven to 375°F (190°C). Line or grease 12-cup muffin tin.
  • In large bowl, whisk together flour, baking powder, baking soda, cinnamon, and 1 teaspoon salt.
  • In separate bowl, whisk bananas, yogurt, egg, sugar, 4 tablespoons extra virgin olive oil, and honey until smooth.
  • Gently fold wet mixture into dry ingredients until no flour remains.
  • Divide batter evenly among muffin cups. Add optional toppings.
  • Bake for 20 to 23 minutes, or until toothpick inserted into center comes out clean.
  • Cool in tin for 5 minutes, then transfer muffins to rack to cool completely or serve warm.
