Ingredients
1 red onion, finely chopped
2 cloves garlic, minced
1 green bell pepper, chopped into cubes
1 lb (450 g) ground beef
14 oz (400 g) canned red kidney beans, drained
8.5 oz (240 g) tomato sauce
6 oz (170 g) shredded cheese
2 tbsp Mexican spice mix (store-bought or homemade)

Instructions
- Preheat oven to 400°F (200°C).
- Heat 2 tablespoons extra virgin olive oil in large oven-proof skillet over medium-high heat. Add onion, garlic, and bell pepper. Sauté for 3 minutes until softened.
- Add ground beef and cook, breaking up with spoon, until browned and cooked through. Stir in Mexican seasoning and cook for 1 minute to toast spices.
- Add beans and tomato sauce. Stir to combine and bring to a simmer.
- Top with shredded cheese and transfer skillet to oven. Bake uncovered for 15 minutes, until cheese is melted and golden.
- Serve hot with your favorite toppings. Serving suggestions include sour cream, jalapeños, tortilla wraps, rice, salsa, and guacamole (optional).
