Classic Beef Stroganoff

Ingredients

1.25 lbs (680 g) chuck beef, cut into 2-inch cubes
24 oz (680 g) mushrooms, sliced
1 onion, thinly sliced
1 tbsp apple cider vinegar
4 tbsp all-purpose flour
2 tsp Dijon mustard
1 tsp paprika
24 fl oz (710 ml) beef stock
2 tbsp Greek yogurt

Instructions

  • Heat 1 tablespoon extra virgin olive oil in large pot. Season beef with ½ teaspoon salt and ½ teaspoon pepper. Sear for 3 to 4 minutes per side. Remove and set aside.
  • Add mushrooms and onions to pot. Cook for 6 to 8 minutes until golden. Deglaze with vinegar.
  • Stir in flour, mustard, and paprika. Add beef and beef stock, season with more salt and pepper, and bring to a boil.
  • Cover, reduce heat to low, and simmer for 120 minutes, or until beef is tender. Take off heat and stir in yogurt.
  • Garnish with parsley and serve with rice and cornichons (optional).
