3.5 oz (100 g) porridge oats
1 heaping tsp baking powder
2 large eggs

Instructions

  • In food processor, blend cottage cheese, oats, baking powder, and eggs into smooth batter.
  • Heat 1 teaspoon extra virgin olive oil in nonstick pan. Drop in 3 to 4 tablespoons batter per pancake. Cook for 3 minutes, flip, and cook for 2 minutes. Repeat with remaining batter.
  • Serve with pineapple, mango, Greek yogurt, coconut, honey, and chia seeds (optional).
