2 tsp fish sauce
¼ tsp coconut sugar
1 green onion (spring onion), minced
½ Thai chili, minced

Instructions

  • Whisk together eggs, fish sauce, sugar, green onions, chili, and pinch of black pepper.
  • Heat 1 tablespoon extra virgin olive oil in nonstick skillet over medium-high heat. Pour in egg mixture. Cook for 3 minutes while pushing edges in and tilting pan.
  • Flip to cook other side for a few seconds.
  • Serve and garnish with green onions, chili, and cucumber (optional).
