1 tbsp ground flaxseed
7 oz (200 g) vegan butter
7 oz (200 g) coconut sugar
1 tsp vanilla extract
11.25 oz (320 g) self-raising flour
1 large orange, to zest

Instructions
- Preheat oven to 200°C (390°F). Line two large baking trays with parchment paper.
- In small bowl, mix flaxseeds with 1 tablespoon cold water. Let sit for 5 minutes to thicken.
- In large mixing bowl, combine butter, coconut sugar, and vanilla extract until smooth. Add flaxseed mixture and stir to combine.
- Add self-raising flour and mix until dough starts to form. Add orange zest and knead gently until evenly incorporated.
- Divide dough into 12 equal portions. Roll each into ball, flatten slightly, and place on prepared trays, leaving some space between them.
- Bake for 12 minutes, or until edges are lightly golden. Remove from oven and let cool on tray for a few minutes before transferring to wire rack to cool completely.
