Ingredients

For the crumble topping:
  4.25 oz (120 g) all-purpose flour
  3.5 oz (100 g) coconut sugar
  1/2 tsp ground cinnamon
  4 oz (115 g) vegan butter, melted
For the filling:
  1.5 oz (45 g) coconut sugar
  1 oz (30 g) cornstarch
  2.2 lbs (1 kg) pears, peeled, chopped

Instructions

  • Preheat oven to 375°F (190°C) and lightly grease 8 x 8 in (20 x 20 cm) baking dish.
  • In medium bowl, combine flour, coconut sugar, ¼ teaspoon salt, cinnamon, and melted butter. Mix with fork until mixture forms coarse crumbs. Set aside.
  • In large bowl, mix sugar and cornstarch. Add chopped pears and toss until evenly coated.
  • Pour pear mixture into prepared baking dish and spread out evenly. Sprinkle crumble topping evenly over fruit.
  • Bake for 45 minutes, or until top is golden brown and filling is bubbling.
  • Let cool for at least 20 minutes to allow filling to thicken. Serve warm or cold.
