Ingredients
For the wet ingredients:
3 ripe bananas, mashed
2 apples (1 cubed + 1 sliced for topping)
3 tbsp (1.5 oz/45 ml) unsweetened almond milk

8 oz (230 g) spelt flour
7 oz (200 g) coconut sugar
1/2 tsp baking soda
1 pinch ground cinnamon, plus extra for topping

Instructions
- Preheat oven to 200°C (400°F). Line 12-hole muffin tray with baking cups.
- In large bowl, mix together spelt flour, coconut sugar, baking soda, and cinnamon. In separate bowl, mash bananas until smooth, then stir in almond milk and melted coconut oil.
- Fold wet and dry ingredients, then mix in cubed apple. Divide batter evenly between muffin cases.
- Slice second apple. Top each muffin with three slices and sprinkle of cinnamon. Bake for 25 minutes, or until golden and knife inserted into center comes out clean.
- Allow to cool in tray for at least 10 minutes, then transfer to wire rack to cool completely.
