4 cloves garlic, minced
10 oz (285 g) mixed mushrooms, sliced
6 fl oz (180 ml) oat milk
4 tbsp tahini
4 oz (115 g) pasta of choice

Instructions
- Cook pasta according to package instructions. Drain and set aside.
- While pasta cooks, heat 1 tablespoon extra virgin olive oil in large skillet over medium heat. Add garlic and sauté for 2 to 3 minutes, stirring frequently, until lightly golden.
- Raise heat to medium-high. Add mushrooms and sauté for 4 to 5 minutes until browned and tender. Add pinch of salt and cook for 1 more minute.
- Reduce heat to medium-low. Add oat milk, tahini, salt, and black pepper. Stir well and simmer for 3 to 5 minutes, or until sauce is creamy and thickened.
- Add drained pasta to skillet and toss to coat thoroughly in sauce. Adjust seasoning to taste and serve immediately.
