1 lemon, zested, juiced
4 tbsp pesto
1 oz (30 g) arugula

Instructions
- In bowl, combine butter beans with lemon zest, squeeze of lemon juice, 1 tablespoon extra virgin olive oil, and pinch of salt and pepper. Mix gently to coat.
- Divide beans between two shallow bowls. Spoon pesto over and top with handfuls of arugula.
- Serve immediately.
