For the cilantro lime rice:

1 lime, zested + 2 tbsp juice
4 tbsp cilantro, chopped

1 avocado, flesh chopped

12 oz (340 g) cooked adobo or fajita chicken breast, sliced
1/2 small red onion, diced

Instructions
- Cook rice in salted water according to package instructions.
- Once cooked, fluff with fork and toss in lime zest, lime juice, and cilantro. Season with salt to taste.
- To assemble, arrange rice and lettuce in 4 bowls, then top with chicken, tomatoes, avocado, corn, beans, and red onion.
