Instructions
- In medium bowl, whisk together eggs, egg whites, and pinch of salt and pepper. Stir in cottage cheese.
- Heat butter in medium skillet over medium heat until melted. Pour egg mixture into center of pan and let cook undisturbed for 30 to 60 seconds.
- When edges begin to set, use spatula to gently push cooked eggs from edges toward center.
- Continue to cook, gently folding eggs every few seconds, until mostly set.
- Serve immediately with tomatoes, toast, rice cakes, or other preferred sides (optional).
