Ingredients
1.6 oz (45 g) dried apricots
0.9 oz (25 g) shredded coconut (desiccated coconut)
4 oz (115 g) porridge oats
2.1 oz (60 g) jumbo oats
5 ½ tbsp maple syrup
2 tbsp coconut oil

Instructions
- Preheat oven to 400°F (200°C). Line baking tray with parchment.
- In large bowl, mix apricots, coconut, and oats.
- In saucepan, melt together coconut oil and maple syrup over medium heat until gently bubbling. Pour warm mixture over ingredients and mix well.
- Press mixture evenly into tray. Bake for 12 to 14 minutes until golden. Cool before cutting into bars.
