Instructions

  • Oven Method:
      Preheat oven to 400°F (200°C). Line baking sheet with parchment.
      Remove pumpkin stem. Cut half and scoop out seeds and fibers.
      Place flesh-side down on baking sheet.
      Roast for 30 to 45 minutes until knife inserts easily.
      Let cool for 1 hour. Scoop out flesh and blend until smooth.
  • Stove Top Method:
      Peel, deseed, and chop pumpkin into chunks.
      Boil in water for 20 to 25 minutes, until soft. Drain well and cool slightly.
      In food processor, blend until smooth.
