Ingredients
6 ¾ oz (190 g) all-purpose flour
1 tbsp pumpkin pie spice
1 tsp baking soda
4 oz (115 g) unsalted butter, room temperature
7 oz (200 g) coconut sugar
4 large eggs
8 oz (240 g) pumpkin purée
½ tsp vanilla extract
1 oz (30 g) pumpkin seeds (optional)

Instructions
- Preheat oven to 350°F (175°C). Spray loaf pan with nonstick cooking spray.
- In medium bowl, whisk together flour, pumpkin pie spice, baking soda, and ¼ teaspoon salt.
- In stand mixer or with hand mixer, combine butter and coconut sugar until light and fluffy (about 2 minutes).
- Add eggs one at a time, mixing until incorporated. Stir in pumpkin purée and vanilla extract.
- Add dry ingredients and mix until just combined.
- Pour batter into prepared loaf pan. Sprinkle with pumpkin seeds, if desired.
- Bake for 50 to 55 minutes, or until toothpick inserted in center comes out clean.
- Cool completely in pan on wire rack before slicing.
