Pumpkin Turkey Chili

Ingredients
1 medium yellow onion, diced
2 cloves garlic, minced
1 ⅓ lbs (600 g) ground turkey
28 oz (800 g) can chopped tomatoes (with liquid)
15 oz (425 g) pumpkin purée (store-bought, or see original recipe)
15 oz (425 g) can black beans, drained
8 fl oz (240 ml) chicken stock
2 tbsp chili powder
2 ½ tsp ground cumin

Instructions
- Heat 2 tablespoons extra virgin olive oil in large pot over medium-high heat. Add onion and sauté for 5 minutes until softened. Stir in garlic and cook for 30 seconds.
- Add ground turkey. Break up with spatula and cook until no longer pink (about 6 to 7 minutes).
- Add pumpkin purée, tomatoes with liquid, black beans, chicken stock, chili powder, cumin, salt, and pepper. Stir to combine.
- Bring to a simmer, then reduce heat to low, cover, and cook for 20 to 30 minutes, stirring occasionally.
