Maple Roasted Pumpkin with Chili & Feta

Ingredients

2 lbs (1 kg) pumpkin, peeled, cut into 1 in (2.5 cm) cubes
1 red onion, cut into small wedges
1.8 oz (50 g) walnuts, roughly chopped
3 tbsp maple syrup
1 ½ tsp dried chili flakes, to taste
3.5 oz (100 g) feta, crumbled

Instructions

  • Preheat oven to 400°F (200°C).
  • Place pumpkin, onion, and walnuts on large parchment-lined baking sheet. Drizzle with 3 tablespoons extra virgin olive oil and maple syrup. Toss well to coat.
  • Sprinkle with chili flakes and ¾ teaspoon salt. Toss again, then arrange in single layer, avoiding overcrowding.
  • Roast for 30 minutes, tossing once at 20 minutes, until pumpkin is browned and tender.
  • Remove from oven and gently toss. Transfer to platter or bowl.
  • Top with crumbled feta, parsley, and minced chili before serving, if using.
