Pumpkin Spice Pancakes

Ingredients
4.5 oz (130 g) all-purpose flour
1 tbsp baking powder
1 ½ tsp pumpkin spice blend
8 fl oz (240 ml) whole milk
2.75 oz (80 g) pumpkin purée (store-bought, or see original recipe)
1 large egg
2 tbsp maple syrup
2 tbsp unsalted butter, melted, plus more for cooking
½ tsp vanilla extract

Instructions
- In medium bowl, mix flour, baking powder, pumpkin spice, and ¼ teaspoon salt.
- In large bowl, whisk together milk, pumpkin purée, egg, maple syrup, melted butter, and vanilla extract until smooth.
- Add dry ingredients to wet ingredients and stir until just combined.
- Heat nonstick pan over medium-low heat. Lightly grease with butter.
- Pour 6 tablespoons of batter per pancake onto pan. Cook until bubbles form and edges look firm (about 2 to 3 minutes). Flip and cook for 1 to 2 minutes until cooked through.
- Serve immediately.
