Ingredients
6.3 oz (180 g) uncooked quinoa
2.1 oz (60 g) spinach, roughly chopped
2 oz (57 g) walnuts, roughly chopped
7.4 oz (210 g) apples, diced
1.4 oz (40 g) dried cranberries, unsweetened
1.1 oz (30 g) red onion, sliced
For the dressing:
1 tbsp maple syrup
2 tsp Dijon mustard
1 tbsp maple syrup
2 tsp Dijon mustard

Instructions
- Cook quinoa according to package instructions. Remove from heat and let rest for 10 minutes. Fluff and season with salt and pepper.
- In jar, whisk 3 tablespoons olive oil, 2 tablespoons apple cider vinegar, and remaining dressing ingredients. Season with salt and pepper.
- Toss quinoa with spinach, walnuts, apples, cranberries, and onion. Add dressing, mix gently, and serve.
