Sweet & Sour Tofu

Ingredients
4.2 oz (120 g) basmati rice
7 oz (200 g) firm tofu, cubed
3 tbsp cornstarch
1 red bell pepper, sliced
1 yellow onion, sliced
2 cloves garlic, sliced
½ head broccoli, florets
4.9 oz (140 g) canned pineapple, chopped
4 fl oz (120 ml) sweet & sour sauce

Instructions
- Cook rice according to package instructions. Toss tofu in cornstarch.
- Heat 1 tablespoon olive oil in pan over medium-high heat. Fry tofu for 5 minutes until golden, then remove.
- In same pan, heat another tablespoon olive oil and cook bell pepper, onion, garlic, and broccoli for 3 minutes. Season with salt and pepper.
- Add sweet and sour sauce and chopped pineapple. Return tofu to pan and heat through. Serve with rice.
