Creamy Miso Mushroom Pasta

Ingredients
4.9 oz (140 g) tagliatelle pasta
7 oz (200 g) oyster mushrooms, chopped
0.7 oz (20 g) dark miso paste
7 fl oz (200 ml) oat cream
1 yellow onion, finely diced
2 cloves garlic, minced
1 tbsp vegan Parmesan cheese, grated

Instructions
- Cook pasta according to package instructions; reserve at least 2 tablespoons pasta water.
- Heat 1 tablespoon olive oil in pan over medium-high heat. Sauté mushrooms 5 to 7 minutes until golden. Season with salt and pepper and remove from pan.
- In small bowl, mix miso paste with cream.
- In same pan, heat another 2 teaspoons olive oil and cook onion until translucent. Add garlic and cook for 2 to 3 minutes. Return mushrooms to pan, add miso cream, and simmer for 1 to 2 minutes.
- Toss pasta with sauce, Parmesan, and 2 tablespoons reserved pasta water. Serve warm.
