Garlicky Tomato White Bean Soup

Ingredients

10 cloves garlic, peeled, smashed
2 x 14 oz (400 g) cans white beans with liquid
28 oz (800 g) can crushed tomatoes
8 fl oz (240 ml) vegetable stock
4 tbsp unsweetened soy yogurt, for serving

Instructions

  • Heat 2 tablespoons olive oil in medium saucepan over medium-low heat. Add garlic and cook for 3 to 5 minutes until golden.
  • Add beans with liquid, tomatoes, and stock. Season. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes.
  • Use hand blender to purée until smooth. Season with salt and pepper to taste. Drizzle yogurt to serve.
