White Bean Spread on Toast

Ingredients

For the bean spread:
  8.8 oz (250 g) carrots, peeled, diced
  2 cloves garlic, finely chopped
  1 tbsp paprika
  28 oz (800 g) canned white beans, drained
  1.25 oz (35 g) tomato paste
For the toast:
  1.4 oz (40 g) almonds, chopped
  8 slices whole wheat bread
  4 tbsp pickled red onion

Instructions

  • Heat 2 tablespoons olive oil in pan and cook carrots for 5 minutes. Add garlic and paprika and cook for 1 minute.
  • Stir in beans and tomato paste. Cook for 4 minutes. Mash, adding 1 to 2 tablespoons water if needed. Season with salt and pepper to taste.
  • Toast almonds in dry pan for 5 minutes. Toast bread. Spread bean mixture on toast. Top with pickled onions and almonds to serve.
