Healthy Cinnamon Rolls

Ingredients
6.1 fl oz (180 ml) whole milk
7 oz (200 g) butter, room temperature
3 tbsp unsweetened applesauce
0.25 oz (7 g) dried yeast
10.6 oz (300 g) whole wheat flour
3 tbsp ground cinnamon
5.3 oz (150 g) pitted dates
1 egg

Instructions
- Heat milk until warm. Remove from heat, then stir in 2 tablespoons butter, 1 tablespoon applesauce, and yeast. Let sit for 10 minutes until slightly bubbly.
- In large bowl, combine flour and ½ tablespoon cinnamon. Fold in milk mixture and knead for 4 to 5 minutes until smooth. Add extra flour if dough is too wet. Form into ball, then return to bowl.
- In food processor or blender, blend dates, remaining butter, remaining applesauce, and cinnamon into a paste.
- Roll dough into 14 x 14 in (36 x 36 cm) square. Spread cinnamon paste evenly. Roll into log and pinch seam to seal.
- Cut into 12 slices (about 1 ¼ in / 3 cm thick). Place close together in baking dish. Cover and let rise for 1 hour in a warm place.
- Preheat oven to 375°F (190°C). Beat egg and brush top of rolls. Bake 25 minutes until golden. Cool briefly before serving.
