Crusted Pork Tenderloin

1.3 lbs (600 g) pork loin steaks
2 eggs
7 oz (200 g) Ritz® crackers (1 ½ sleeves), crushed

Instructions

  • Flatten each tenderloin with mallet or rolling pin. Season with salt and pepper.
  • Beat eggs in shallow bowl. Dip each tenderloin in eggs, then in Ritz cracker crumbs. Place on plate.
  • Heat large skillet over medium and add 1 tablespoon butter and 1 tablespoon olive oil.
  • Fry tenderloin for 2 to 3 minutes per side until golden and cooked through. Add another 1 tablespoon butter and 1 tablespoon olive oil and repeat with remaining tenderloins.
