Ginger & Green Onion Steamed Salmon

Ingredients
1 ½ lbs (680 g) salmon filets, cut into 1 inch (2.5 cm) cubes
4 green onions, sliced, white & green parts separated
1 inch fresh ginger, cut into matchsticks
2 tbsp tamari
1 tbsp coconut sugar

Instructions
- In bowl, mix 8 fl oz (240 ml) water with salmon and 1 tablespoon salt. Let sit for 10 minutes.
- In large pot (or skillet with lid), combine 4 fl oz (120 ml) water, white onion segments, ginger, tamari, and sugar. Simmer for 5 to 7 minutes until liquid is reduced by half.
- Lower heat. Add fish and coat in sauce. Arrange evenly, cover, and steam 8 to 12 minutes until cooked through.
- Taste sauce and adjust salt and/or sugar if needed. Serve fish with sauce and sliced green onions.
