  • Brush 1 teaspoon olive oil over 10-inch nonstick or cast-iron skillet. Turn heat to medium and evenly sprinkle 2 tablespoons Parmesan. Cook until cheese starts to melt (about 2 minutes).
  • Crack eggs over cheese, cover, and cook 2 to 3 minutes until starting to set.
  • Uncover, increase heat to medium-high, and cook until edges are crisp (about 1 to 2 minutes). Avoid over-browning cheese. Sprinkle with remaining Parmesan, season with salt and pepper, and serve.
