Chicken Rice Porridge

Ingredients
7 oz (200 g) short grain rice
48 fl oz (1.42 L) chicken stock
15.9 oz (450 g) pulled chicken breast, cooked
1 medium carrot, finely chopped
1 celery stalk, finely chopped
4 mushrooms, finely chopped
2 tbsp sesame oil

Instructions
- Soak rice in water for 1 hour, then drain.
- Heat sesame oil in medium pot. Add rice and stir-fry until translucent. Pour in chicken stock, bring to boil, then simmer for 20 to 25 minutes, stirring occasionally.
- Reduce heat and add chopped vegetables. Cover and cook for 10 to 15 minutes until soft.
- Stir in chicken during final minutes. Season with salt and pepper. Serve hot.
