2 zucchinis
1 shallot, diced
6 eggs
3.4 fl oz (100 ml) whole milk
2.8 oz (80 g) cheddar cheese, grated

Instructions

  • Wash and coarsely grate zucchinis. Place in mesh sieve, sprinkle with salt, and set aside to drain. Preheat oven to 340°F (170°C).
  • Heat ½ tablespoon olive oil in pan. Fry shallots for 3 minutes. Squeeze excess liquid from zucchinis and add to pan. Sauté for 6 minutes.
  • In bowl, whisk eggs and milk. Season with salt and pepper. Stir cheese into egg mixture, then add zucchini and shallots. Mix.
  • Brush casserole dish or baking pan with ½ tablespoon olive oil. Pour mixture into dish and bake for 25 to 30 minutes until set.
