Chickpea & Sweet Potato Quesadillas

12 oz (340 g) cooked sweet potato flesh
8.4 oz (240 g) chickpeas, drained, rinsed
1 oz (30 g) nutritional yeast
3 tbsp hot sauce of choice
8 large flour tortillas

Instructions

  • In food processor, combine sweet potato, chickpeas, nutritional yeast, and hot sauce. Blend into thick purée. Season with salt to taste.
  • Spread filling evenly over 4 tortillas. Top with remaining tortillas and press gently to seal.
  • Heat large skillet over medium and lightly grease with 1 tablespoon olive oil.
  • Place one quesadilla in pan and press down to crisp. Cook until golden (about 3 minutes per side).
  • Repeat with remaining quesadillas. Slice and serve warm.
